this summer has been nothing short of amazing. and i am totally dreading the rain. seriously people, winter is coming!
not only has the weather been beautiful, but everything tastes SO good!
the other day, i was telling my mom about the fried green tomato sliders i made. like most moms, she thought it’d be a nice gift to send me home with 5 lbs of green tomatoes.
while i adore fried green tomatoes, i’m not sure i could eat 5 lbs of it.
the OBVIOUS solution for me was to make green tomato salsa. just joking. i had no idea what else you could make with green tomatoes. that’s why there’s google. after further research i had an aha! moment. salsa! green tomatoes have the perfect texture and flavor for salsa. crunchy. tart. then i searched my kitchen looking for ingredients to pair the tomatoes with.
and then it was all over. green tomato salsa with nectarines.
- 2 green tomatoes, diced small (about 2 cups)
- 2 nectarines, diced small (about 2 cups)
- 1 large jalapeno, minced
- juice of 2 limes
- ½ cup chopped cilantro
- ½ tbsp ground cumin
- 1 small shallot minced
- combine all ingredients in a large bowl
- serve with tortilla chips! also delicious over grilled chicken and fish
