my hubby is out of town for the next two weeks. he’s headed to butte, montana for the butte 100 mountain bike race. he’s such a badass! totally wish i could come watch. but work has suggested otherwise.
whenever jake isn’t around, my world shifts. not in a bad way. i just realize all the things he does for me. like… make me coffee every morning. and make me eggs and bacon because i’m running around like a mad woman trying to find my keys and my shoes (and my purse and my phone and then my keys again) and and… and be able to call him and ask him if i’ve turned off my flat iron.
mmm, maybe i’m a total mess when he’s gone. but only for a quick second. i then regain my composure and things are fine again.
and then i realize i get to make “girl food” while he’s gone. for me “girl food” is all the food he typically doesn’t like- like mushroom burgers, quinoa, beets, kale…etc…
or this breakfast smoothie.
just as long as i don’t tell him what is in it 😉
peach smoothie for one
- 1 cup kale
- 2 cups frozen peaches
- 1/2 small avocado
- 1/4 cup greek yogurt
- 1 tbsp honey
- 1 cup almond milk (or coconut milk or regular milk)
- 2 tsp lime juice
combine ingredients in a blender. blend until smooth.
